Masala Dosa
Potato stuffing for Indian Dosas. Masala dosa is fermented rice and lentils pancake/crepe with a spicy potato filling.
Tava
8 each White potatoes
2 tbsp Olive oil
1 tsp Mustard seeds
1 tsp Cumin seeds
2 tsp Black Lentils (urad dahl)
2 tsp Split Chickpeas (chana dal)
3 each Thai or Serrano Chiles
4 each Dried red chiles
12 each Curry leaves
1 each Onion, sweet
1 tbsp Ginger, chopped
4 each Garlic cloves
1 tsp Sea salt
1/2 tsp Turmeric powder
1/2 cup Cilantro (fresh coriander), chopped
Wash the potatoes, cut in half and place with skins down on a jelly roll cooking sheet with parchment paper. Drizzle olive oil and salt and cracked pepper. Bake for 1 hour at 350F.
In a large frying pan, add 1 tbsp of olive oil, mustard seeds, black lentils (urad dahl), and cumin seeds on low heat.
Add green chiles (Thai or Serrano), dried red chilies.
Add chopped onion
