Dosa
- 4-1/2 cups Sona Masoori rice (alternate use Jasmine)
- 1 cup Urad dal
- 1/4 cup Poha (flattened rice)
- 1 tsp Fenugreek seeds (methi)
- 2 capsules Lactobacillus reuteri (L. reuteri) (probiotic-assisted fermentation)
- 1 cup Water
Wash rice and urad dal thoroughly
Soak rice + fenugreek seeds together in water for 8 hours. Then drain, reserve 1 cup of water for blending below.
Soak urad dal in water for 8 hours. Then drain.
Soak poha for 30 minutes prior to blending.
In a Vitamix, blend 1/2 cup of the soaked rice, fenugreek and poha at a time. Blend until smooth. Add water as needed.
In a Vitamix, blend 1/2 cup of the urad dal at a time. Blend until smooth. Add water as needed.
Mix both batters together. Cover and let the batter ferment 8-12 hours (overnight) in a warm place until it doubles in size and turns airy.
Add salt to the batter.
