Dosa

  • 4-1/2 cups Sona Masoori rice (alternate use Jasmine)
  • 1 cup Urad dal
  • 1/4 cup Poha (flattened rice)
  • 1 tsp Fenugreek seeds (methi)
  • 2 capsules Lactobacillus reuteri (L. reuteri) (probiotic-assisted fermentation)
  • 1 cup Water
  1. Wash rice and urad dal thoroughly

  2. Soak rice + fenugreek seeds together in water for 8 hours. Then drain, reserve 1 cup of water for blending below.

  3. Soak urad dal in water for 8 hours. Then drain.

  4. Soak poha for 30 minutes prior to blending.

  5. In a Vitamix, blend 1/2 cup of the soaked rice, fenugreek and poha at a time. Blend until smooth. Add water as needed.

  6. In a Vitamix, blend 1/2 cup of the urad dal at a time. Blend until smooth. Add water as needed.

  7. Mix both batters together. Cover and let the batter ferment 8-12 hours (overnight) in a warm place until it doubles in size and turns airy.

  8. Add salt to the batter.
